Ricotta Toast w. Pistachios, Thyme & Thick Honey
Good ricotta, good bread. Most people add whatever honey's around. That's the mistake. Serve as an appetizer or snack, or add an egg and call it a meal.
INGREDIENTS
- 2 Tbsp. Honey Department
- 1 tsp. lemon zest
- 1 tsp. lemon juice
- 1–2 tsp. extra-virgin olive oil
- ¾ cup whole milk ricotta cheese
- 2 slices rustic bread, toasted
- ¼ cup pistachios, toasted, roughly chopped & toasted
- 1 tsp. fresh thyme
- Maldon salt & black pepper
INSTRUCTIONS
- Place ricotta in a bowl. Add lemon zest, lemon juice, olive oil and a pinch of salt.
- Whisk until smooth and lightly aerated.
- Spread ricotta generously over warm toast.
- Drizzle some olive oil, squeeze Thick Honey.
- Sprinkle pistachios, lemon zest and thyme
- Finish with cracked black pepper and Maldon salt
