Ricotta Toast w. Pistachios, Thyme & Thick Honey

 

Good ricotta, good bread. Most people add whatever honey's around. That's the mistake. Serve as an appetizer or snack, or add an egg and call it a meal.

INGREDIENTS

  • 2 Tbsp. Honey Department
  • 1 tsp. lemon zest
  • 1 tsp. lemon juice
  • 1–2 tsp. extra-virgin olive oil
  • ¾ cup whole milk ricotta cheese
  • 2 slices rustic bread, toasted
  • ¼ cup pistachios, toasted, roughly chopped & toasted
  • 1 tsp. fresh thyme
  • Maldon salt & black pepper

INSTRUCTIONS

  • Place ricotta in a bowl. Add lemon zest, lemon juice, olive oil and a pinch of salt.
  • Whisk until smooth and lightly aerated.
  • Spread ricotta generously over warm toast.
  • Drizzle some olive oil, squeeze Thick Honey.
  • Sprinkle pistachios, lemon zest and thyme
  • Finish with cracked black pepper and Maldon salt
